Erguna, a county-level city under Hulunbuir City of Inner Mongolia Autonomous Region, sits right across Russia only by the Erguna River. The Russian ethnic people living here still retain a rich ethnic culture, among which is the baking ofdalieba, a sourdough bread that is very characteristic of the Russians living in China.

Liebais the transliteration of the Russian word “bread”. It is made with cornmeal fermented with beer, then dried, using mashed potatoes as the base, then adding 1/3 of the flour and fermenting ...... only after at least 8 hours is it baked in the oven. The most traditional lieba takes at least 12 hours before it’s served on the dinning table.

Eatingliebais a local food tradition, behind which are the making procedures that have been passed down by the Russians since centuries ago. Today, this sourdough bread is exuding a unique ethnic flavor.
